Friday Night Dinner – Feast of Ninkasi
“He who does not know beer, does not know what is good.”-Sumerian Proverb


Ninkasi was the leading goddess of ancient Sumeria, a culture that thrived from the 5th to the 3rd millennium BCE in what is now part of Mesopotamia. Among the Sumerians, she was considered the mother of all creation. In the world beyond, she was in charge of brewing all the beer for the great god En-lil and his entourage. On Earth, she was revered as the goddess of fertility, which put her in charge of the harvest, beer, and brewing. Her emblem was an ear of barley or wheat, and in the spring she caused the grain to grow.


The Craft Beer Forum of Oklahoma pays homage to the great Ninkasi by naming its inaugural craft beer dinner in celebration of her. Her love of beer and attention to her craft provided the drink of the gods to mortals and still does so to this day. We hope to see you at The Feast of Ninkasi and we thank you for your support of our students’ hospitality education!

FSPCA Preventive Controls for Human Food Blended Course

The new FSMA regulation requires every processing facility to have a trained resource person or Preventive Controls Qualified Individual who has completed a specialized training course such as the one developed by the Food Safety Preventive Controls Alliance (FSPCA) that is recognized by the FDA. This person will oversee the implementation of the facility’s food safety plan and other key tasks.

This Blended Course has two parts. Those who complete the Part 1: Online are eligible to attend a one-day Part 2: Instructor-Led course taught by an FSPCA Lead instructor. You must complete both parts to receive the FSPCA Certificate of Training.

You must complete Part 1: Online before you may take this Part 2 course. When you complete Part 1: Online, you will receive an enrollment ticket and a completion email. Present either the enrollment ticket or the completion email to your Part 2 lead instructor; you will not be able to attend Part 2: Instructor-Led without providing evidence of Part 1: Online completion.

Cost: $400 per person for large companies (greater than 10 employees); $350 per person for small companies (10 employees or less).

Home Baker Training

In 2013, the State of Oklahoma passed into law the Home Bakery Act. Confusion exists in correct adherence to this law.  Additionally, selling food to the general public comes with expectations towards food safety the home-baker may not fully be aware. Since home bakeries are not required to be inspected or licensed, home-bakers would not be inclined to take expensive and time-consuming preventative control workshops. Currently, no instruction is offered in the state to educate home-bakers on best practices, food safety and liability issues that can come with producing a baked food.

FAPC, along with the Oklahoma Department of Agriculture, Food and Forestry, will offer one-day courses covering topics of good manufacturing practices, allergens/cross contamination and food safety/microbiology.  A computer worksheet will also be offered to the attendees, aiding in record-keeping and calculations of income, with decision tools to determine if the baker is capable of moving on to a brick-and-mortar facility.

Pianist Jonathan Biss Concert 7

Jonathan Biss continues to expand his reputation as a teacher, musical thinker, and one of the great Beethoven interpreters of our time. He was recently named Co-artistic Director alongside Mitsuko Uchida at the Marlboro Music Festival, where he has spent twelve summers. In addition, he has written extensively about his relationships with the composers with whom he shares a stage. A member of the faculty of his alma mater the Curtis Institute of Music since 2010, Biss led the first massive open online course (MOOC) offered by a classical music conservatory, Exploring Beethoven’s Piano Sonatas, which has reached more than 150,000 people in 185 countries.
