Housing Hacks: Microwave Recipes

Use your microwave to cook for every season and meal! We partnered with 

University Dining Services to bring hot recipes to residential halls. Microwaves are available in most shared spaces and permitted in on-campus rooms 

 

French Toast


French Toast

Start your day off right with this French toast recipe! Make sure the eggs are cooked before enjoying 

Ingredients: 

  • One slice of bread (cubed) 
  • One tablespoon of butter 
  • Three tablespoons of milk 
  • One egg 
  • One drop of vanilla extract 
  • Dash of cinnamon 

Instructions: 

  • Melt butter. Add cubed bread to melted butter.
  • Mix remaining ingredients together and combine with bread. 
  • Microwave for one minute, then 20 more seconds until the eggs appear cooked. 
  • Top with strawberries, syrup or whipped cream. 

Chicken Quesadilla


Chicken Quesadilla 

Use leftover chicken tenders for these quesadillas! Take care to spread the cheese over the tortilla to make sure it is well incorporated. This recipe is perfect for a quick lunch in your hall between classes. 

Ingredients: 

  • Two medium flour tortillas 
  • One-half cup of cooked shredded chicken 
  • One-half of a diced bell pepper 
  • One tablespoon of taco seasoning 
  • One-fourth cup of cheddar cheese 

Instructions: 

  • Microwave tortillas on a plate until slightly crispy.
  • Mix chicken, diced peppers and taco seasoning in a bowl until evenly combined, then cook for one to two minutes.
  • Spread the mixture evenly on one tortilla, cover evenly with cheese then top with the other tortilla.
  • Cook in microwave for another 30 seconds to one minute. Slice and serve. 

Fried Rice


Microwave Fried Rice 

Feeling a little more adventurous? Try this quick fried rice recipe! Remember to use potholders or a towel when moving hot bowls out of the microwave.  

Ingredients: 

  • One-half cup of rice 
  • One cup of water 
  • One tablespoon of soy sauce 
  • One teaspoon of sesame oil 
  • Two strips of chopped bacon 
  • One-half cup of frozen peas and carrots 
  • Two eggs 

Instructions: 

  • Combine rice, water, soy sauce, sesame oil and bacon.
  • Stir, then microwave covered for six to eight minutes until rice is fully cooked.
  • Mix frozen peas and carrots into the rice. In a separate bowl beat the eggs.
  • Microwave eggs and the rice again for one to two minutes. Break up the egg into small bits and mix with the rice. 

Pumpkin Cookie


Pumpkin Cookie 

The beginning of school also means the beginning of fall - pumpkin cookie! Use this recipe to treat yourself after a long day. Stop by Caribou Coffee at the Student Union to mellow out the sweetness with a coffee. 

Ingredients: 

  • Four tablespoons all-purpose flour 
  • One and one-half tablespoons of granulated sugar 
  • Two tablespoons of canned pumpkin puree 
  • One tablespoon of melted butter 
  • One-eighth teaspoon of ground cinnamon 
  • Two tablespoons of semi-sweet chocolate chips 

Instructions: 

  • Combine all ingredients except chocolate chips in an oversized mug or bowl.
  • Whisk until smooth. Stir in chocolate chips.
  • Cook in microwave for 50 seconds.  

Macaroni and Cheese


Macaroni and Cheese 

Mac and Cheese is perfect for a late-night study session! Take care to mix the cheese and milk with the macaroni until it is melted.  

Ingredients: 

  • One-half cup of elbow macaroni 
  • Four tablespoons of shredded cheddar cheese 
  • Three-fourths cup of water 
  • Four tablespoons of milk 

Instructions: 

  • Add water and macaroni to an oversize mug or bowl.
  • Microwave for three minutes and 30 seconds.
  • Add shredded cheese and milk. Stir until combined.
  • Microwave for one more minute. Stir until well mixed.
